I don't think it's locked in at any age. At 16 jazz was the only music I wanted to hear. At around 25 it was Sgt Pepper, Otis Redding Ray Charles etc. At around 35 it was classical music. At maybe 45 I was done with music entirely, except when the car stereo was working I'd listen to ABC Classical now & then.
