They only dress 40% ........... that’s an interesting fact.

Sort of like buying avocados......... never buy the small ones they never dress out as well as the large ones on a cost basis.

Banana skins on small bananas can be somewhat thicker on a ratio of banana to skin.

Meat however cooks better with the bone in place, thus it’s not a great comparison comparing prices between cuts with bone and no bone unless you are going rare and tender.

Mind you, the cheapest cuts, bone in and slow cooked by an experienced cook can leave many premium cuts in second position.

It’s a bit like beer, it all comes down to personal preferences.
