While we wait for SleepCheck's data, here are the data for the Monash Fodmap app taken from https://www.monash.edu/about/who/publications/annual-report. Looks like in the past few years, they're earning around $1m a year with < 100k new users a year. Now we just need to beat them in the app store.

With sales exceeding $5 million, it’s expanding internationally, and has established a food certification scheme.
